Every LaMaison oyster follows a meticulous four-stage journey — from the open Atlantic waters to your table — ensuring exceptional quality at every step.
Our oysters begin their journey in the pristine waters of the Marennes-Oléron basin, where they are carefully raised in mesh bags on iron tables. Workers regularly turn and sort the bags to ensure even growth and optimal shell formation. The unique combination of Atlantic tides, mineral-rich waters, and our family's five generations of expertise produces oysters with unmatched character.



After initial growth at sea, our finest oysters are transferred to the legendary claire ponds — shallow clay-bottom basins unique to the Marennes-Oléron region. Here, in carefully managed low-density conditions, they develop their distinctive flavor profile. The interplay of fresh and salt water, combined with naturally occurring microalgae, gives each oyster its signature taste and the prized green hue of our Fine de Claire Verte.



Every LaMaison oyster undergoes rigorous purification in our state-of-the-art depuration facility. Using advanced UV treatment and continuously monitored water systems, we ensure each oyster meets the highest European food safety standards. Our EMYG-certified purification process guarantees freshness, purity, and consistent quality — from basin to plate.

Our oysters are carefully packaged to ensure their freshness and optimal quality. Each shipment is carried out with the utmost care to guarantee an exceptional tasting experience upon arrival.
