For several weeks, this oyster matures in the claires — shallow clay basins unique to Marennes-Oléron — acquiring a shell quality superior to that of a fine open-sea oyster. The claire's mineral-rich environment and natural phytoplankton give it its signature delicate character.

The rare green — nature's most distinctive oyster
Fine de Claire Verte Label Rouge is an official label awarded by the French Ministry of Agriculture, subject to very demanding control standards. Its distinctive green color is obtained thanks to the presence in the claires of blue navicula, a micro-algae filtered by the oyster which retains the pigment — turning its gills a unique shade of green.
